Burritos
Perfect for using up leftover rotisserie chicken and cilantro is a must.
ingredients
- 2 Tbs. olive oil
- 1 medium onion, sliced
- 2-3 cups leftover meat such as steak or chicken, cut into chunks
- 2 medium ripe tomatoes, cut into chunks
- 1/4 cup cilantro, roughly chopped
- salt and pepper
- 4-6 flour tortillas
- salsa
- avocado slices
- sour cream
- shredded cheese

Heat a large skillet over medium-high heat. When the pan is hot, add the olive oil and saute onions for 2 minutes or until soft.

Add the meat, tomatoes and cilantro. Season with salt and pepper and saute for another 3-4 minutes, until the tomatoes are soft and the meat is warm.

Divide the mixture evenly among the tortillas and add toppings.
