Rhubarb Crisp

Crust and Topping:
  • Crust:
  • 1 Cup Flour
  • 3/4 Cup Oatmeal(uncooked)
  • 1 Cup Brown Sugar
  • 1/2 Cup melted Butter
  • 1 teaspoon Cinnamon
  • 4 Cups cut up Rhubarb
  • Mix first 5 ingredients until crumbly and press 1/2 of crumb mixture into 9X9 inch pan. Cover with rhubarb.

Filling:
  • 1 Cup Sugar
  • 2 Tablespoons Corn Starch
  • 1 Cup Water
  • 1 teaspoon Vanilla
  • Cook until thick and clear. Pour over rhubarb.

Top with remaining crumbs. Bake in 350° oven for 1 hour. Best served warm with ice cream or whipped cream. Apples or peaches may be used instead of rhubarb.
