Rhubarb Crisp
ingredients
Crust and Topping:- Crust:
- 1 Cup Flour
- 3/4 Cup Oatmeal(uncooked)
- 1 Cup Brown Sugar
- 1/2 Cup melted Butter
- 1 teaspoon Cinnamon
- 4 Cups cut up Rhubarb
- Mix first 5 ingredients until crumbly and press 1/2 of crumb mixture into 9X9 inch pan. Cover with rhubarb.

- 1 Cup Sugar
- 2 Tablespoons Corn Starch
- 1 Cup Water
- 1 teaspoon Vanilla
- Cook until thick and clear. Pour over rhubarb.

Top with remaining crumbs. Bake in 350° oven for 1 hour. Best served warm with ice cream or whipped cream. Apples or peaches may be used instead of rhubarb.
