Mexican Caviar (Black Bean Dip)
A great healthy and tasty appetizer
ingredients
- 1/4 C olive oil
- 1/4 C red wine vinegar
- 1/2 t salt
- 1/8 t (or to taste) hot sauce
- (1) 11 oz can Mexican corn
- (1) 16 oz can whole black beans, drained & rinsed
- 1/2 C chopped green onions
- 1 large tomato, chopped
- 1 ripe avocado, peeled and chopped
- tortilla chips
directions
In a small bowl, whisk oil, vinegar, salt and hot sauce to make dressing. In a large bowl, mix corn, beans and onions. Pour dressing over corn mix and marinate in refrigerator for 3-6 hours. Just before serving, gently stir in tomato and avocado. Serve with tortilla chips.
