Roasted Asparagus
This springtime vegetable is lovely roasted in the oven or on the grill top. I usually serve this dish for Easter dinner.
ingredients
- 1 lb. of fresh asparagus
- olive oil for drizzling
- salt

Preheat the oven to 500°. Snap woody end of asparagus off and discard. Drizzle with olive oil and salt and toss. Place on baking sheet or on the grill. Roast for approximately 10 minutes.

This recipe will serve four nicely. If serving more than four guests, double the recipe.

If you want to serve as an appetizer, wrap in prosciutto or thinly sliced ham. Yum!
