Roasted Asparagus wrapped in Prosciutto
This is a great appetizer for Easter dinner when Asparagus is in season.
ingredients
- 1 lb thick stalk Asparagus
- 1/2 lb Prosciutto slices
- 1/2 lb Shaved slices Parmesan Reggiano (optional)
- Olive Oil
- Sea Salt & Pepper

Preheat the oven to 400F

Trim the woody ends off the asparagus.

Place them in a single layer on a cookie sheet and drizzle with about 1-2 tbsp of olive oil. Salt and Pepper them.

Roast them in the oven for 8-10 minutes until tender.

Remove them from the oven and cool them just enough so that you can handle them.

Cut the prosciutto slices in half.

Take an Asparagus spear and place in on the end of a Prosciutto slice, place the shaved piece of Parmesan on top and wrap the Prosciutto around like a pig in blanket. Repeat process with the remainder.

Place a on platter and serve.
