Hearty Comfort Food Lasagne
My mom made huge helpings of this for us as kids. I’ve used this recipe to make a hearty meal for people in our church who recently had a kid. It freezes really well.
ingredients
- 3 jars spaghetti sauce (I prefer Newman’s Own)
- 2 16oz cans tomato puree
- 2 16 oz cans crushed tomatoes
- 1 lb. ground beef
- 1 lb chicken breast (cut into bite sized pieces)
- 2 T italian herbs
- 2 T basil
- Juice from 1 1/2 lemons
- 2 bay leaves
- No cook lasagne noodles
- Fresh parsley
- 2 eggs
- 16oz ricotta cheese
- 16 oz cheddar cheese
- 16 oz romano
- Mozzarella to taste
- 16 oz cottage cheese

Brown beef, sausage or fake sausage. Drain fat. Combine spaghetti sauce, tomato puree, crushed tomatoes, ground beef, italian herbs, basil and fresh lemon in a huge sauce pot. Add raw chicken. Boil. Reduce to simmer. Cover and cook for 2-3 hours.

Mix 2 eggs, cottage cheese, ricotta, romano, cheddar and parsley together in a large mixing bowl.

In two 9x13 pans, layer in this order:

sauce, noodles, cheese, mozzarella. Repeat.

Preheat oven to 350 degrees. Bake for 45-55 minutes. Let sit for 15 minutes before serving.
notes
You can substitute the red meat for turkey, or ground chicken. You could also substitute it with fake ground meat for a hearty vegetarian alternative. This recipe freezes really well. Defrost overnight in the fridge
