Shrimp Bruschetta
ingredients
- 1 1/2 cup water
- 2 teaspoons Old Bay seasoning (divided)
- 3/4 lb. medium shrimp, peeled and deveined
- 2 Tablespoons finely chopped green onion
- 2 Tablespoons finely chopped red bell pepper
- 1 tablespoon chopped parsley
- 2 teaspoons water
- 1 teaspoon olive oil
- 1 egg white
- 1 loaf baguette-style French bread
- 2 Tablespoons mayonnaise

Combine 1 1/2 cup water and 1/2 teaspoon Old Bay seasoning in a saucepan. Bring water to a boil.

Add shrimp and cook 3 to 5 minutes or until shrimp turns pink. Drain and cool.

Finely chop shrimp. Mix shrimp and remaining Old Bay with next 6 ingredients. Stir.

Cut bread diagonally into 1/2 inch slices and lightly toast. Spread bread slices lightly with mayonnaise.

Place bread on baking sheet coated with cooking spray.

Bake at 350 degrees for 8-10 minutes.
