Cocoa Cheesecake
ingredients
CRUST- 1 1/2 c crumbled chocolate graham crackers or chocolate wafer cookies
- 1/3 c sugar
- 1/3 c butter, melted
- 2 - 8 oz packages cream cheese, softened
- 3/4 c plus 2 tbs sugar
- 1/2 c cocoa powder
- 2 tsp vanilla, divided
- 2 eggs
- 1 c sour cream

CRUST
Combine all ingredients. Press mixture into bottom and halfway up sides of a 9" springform pan. Set aside.
CHEESECAKE

Preheat oven to 375 degrees.

Beat cream cheese, 3/4 c sugar, cocoa powder and 1 tsp vanilla in a large bowl until fluffly. Add eggs and blend well. Pour into prepared crust. Bake for 20 minutes. Cool for 15 minutes.

Change oven heat to 425 degrees.

Combine sour cream, 2 tbs sugar and 1 tsp vanilla in a small bowl. Stir until smooth. Spread evenly over baked filling. Bake for 10 minutes.

Cool and chill for several hours.
notes
Put the graham crackers or cookies into a plastic freezer bag and roll a rolling pin over it to make crumgs
