Warm Bacon Spinach Salad
Healthy and Delicious!
ingredients
- SALAD-
- 1/2 lb fresh spinach leaves
- 1/2 lb head read leaf lettuce
- 1 package (8 oz) sliced mushrooms
- 1 small red onion, sliced
- 4 slices bacon, cooked and crumbled (reserve 1 Tbsp bacon drippings)
- WARM DRESSING-
- 1/4 cup red wine vinegar
- 2 tsp fresh squeezed lemon juice
- 1 tsp dijon mustard
- 1 Tbsp sugar
- 1/4 tsp garlic powder
- salt and pepper to taste
- 1/4 cup olive oil
- 1 Tbsp reserved bacon drippings

Toss spinach, lettuce, mushrooms, onion, and bacon together. Refrigerate until ready to serve.

Combine first 6 dressing ingredients together, whisking until sugar is dissolved. Slowly whisk in oil.

When ready to serve, heat bacon drippings over medium heat. Slowly add dressing and through, stirring constantly. Toss salad dressing to evenly coat. Top with pecans.
