Warm Bacon Spinach Salad

ingredients

  • SALAD-
  • 1/2 lb fresh spinach leaves
  • 1/2 lb head read leaf lettuce
  • 1 package (8 oz) sliced mushrooms
  • 1 small red onion, sliced
  • 4 slices bacon, cooked and crumbled (reserve 1 Tbsp bacon drippings)
  • WARM DRESSING-
  • 1/4 cup red wine vinegar
  • 2 tsp fresh squeezed lemon juice
  • 1 tsp dijon mustard
  • 1 Tbsp sugar
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • 1/4 cup olive oil
  • 1 Tbsp reserved bacon drippings

    Toss spinach, lettuce, mushrooms, onion, and bacon together. Refrigerate until ready to serve.

    Combine first 6 dressing ingredients together, whisking until sugar is dissolved. Slowly whisk in oil.

  • 3

    When ready to serve, heat bacon drippings over medium heat. Slowly add dressing and through, stirring constantly. Toss salad dressing to evenly coat. Top with pecans.
