Asian Salad with Chicken
A very satisfying chicken salad; full of flavor!
ingredients
Salad- 1 3 oz pkg ramen noodles
- 1/4 c dry-roasted nuts (peanuts, cashews, or almonds )
- 3 c shredded romaine and/or iceberg lettuce
- 1 c shredded red or napa cabbage
- 1 c thinly sliced bok choy
- 1/2 c shredded carrot
- red bell peppers sliced thin and green onions sliced to taste
- 2-3 c cooked chicken shredded to bite size pieces
- 2-3 Tbs salty/sweet sesame sticks
- 2 Tbs sugar
- 3 Tbs rice vinegar
- 3 Tbs low-sodium soy sauce
- 2 heaping tsp peanut butter
- 1/8-1/4 tsp garlic chili paste (Asian)
- 1/2 tsp curry powder
- 1/2 - 1 tsp sesame oil

Crumble noodles and discard seasoning packet. Heat a non-stick skillet over med-high heat. Saute nuts until toasted. Remove from heat.

Assemble all of the above ingredients and toss with Asian dressing. Sprinkle sesame sticks on top of individual servings.
Low calorie Asian Dressing
Combine all of the above ingredients and whisk until peanut butter is blended and sugar has dissolved.
