Chinese Chicken Salad
This is so good! Just add your favorites to it...if you don’t like the orange, try pineapple.
ingredients
- 6 oz. rice sticks
- Oil for deep frying
- 1 head of iceberg, shredded
- 3 c. chicken, shredded
- 1/2 c. almonds slivered,toasted
- 1 c. green onion, sliced
- 1 c. cilantro, chopped
- mandarin oranges & won ton skins, fried
- Dressing #1
- 2 c. Mayo
- 1 1/4 tsp. Worcestershire sauce
- 2 tsp. soy sauce
- 2 tsp. oil
- 4 tsp. prepared mustard
- 1 Tbsp. lemon juice
- Dressing #2
- 1/4 c. sesame oil
- 1/2 c. vegetable oil
- 2 tsp. Worcestershire sauce
- 1/2 c. vinegar
- 1 tsp garlic, minced
- 1 tsp. ginger, salt and pepper

You can add mandarin oranges, fresh bean sprouts.

Deep fry the pkg. of rice stick. If you would like more crunch, fry up some won ton skins cut in 1/2 inch strips.

The rice stick can get messy, I break it up in a plastic bag, then fry in small batches, drain on paper towel and store in zip lock bags. They last a few weeks in a bag.

Combine all the ingredients, except the won ton skins and rice sticks...add those just before serving along with the dressing.

Trader Joes Oriental Salad Dressing is the best...I use that with this salad. Serve with a thick soft bread stick, or quick bread.
