Mama's Chocolate Chocolate Cake
ingredients
- 2 c. flour
- 2 c. sugar
- 1/2 t. salt
- 1 stick butter or margarine
- 1 c. water
- 1/2 c. vegetable oil
- 3 T. cocoa
- 2 eggs, slightly beaten
- 1 t. vanilla
- 1 t. baking soda
- 1/2 c. buttermilk
- Icing:
- 1 stick butter or margarine, softened
- 3 T. cocoa
- 1 t. vanilla
- 3 T. water
- 1 box powdered sugar
- 1/2 c. nuts (optional)

Stir flour, sugar, and salt together in large bowl, and set aside. In small boiler, heat water, oil, butter, and cocoa, and bring to a boil. Add to dry ingredients, and mix with mixer until well-blended. In separate bowl, mix eggs, vanilla, buttermilk, and soda. Add to chocolate mixture, and mix with mixer for two to three minutes.

Spray rectangular baking pan with Baker’s Choice, which is a product that mixes oil and flour. Alternatively, you could use Pam, and dust with flour, making sure to shake out all excess flour before adding batter.) Bake at 350 degrees for about 30 minutes. This could vary from 25 to 35 minutes, depending on the size of the pan. To be sure cake is done, insert toothpick into center, and when it comes out clean, center is done. Don’t over bake. Ice cake immediately.

Mix all ingredients (except nuts) with electric mixer. Icing may seem too dry at first, but continue to mix until all sugar is absorbed by water and butter. If still not spreadable, add 1/2 t. water at a time until desired consistency.

Note: Make sure to give mixer beaters and bowl to family members to lick clean. Figure out a way to divide it equally, or they will complain that someone else got more than they did. Sing “Happy Birthday” and enjoy!
