Loren's Buttermilk Cornbread
ingredients
- 1 c. cornmeal
- 1 c. wheat flour
- 1 T. flax seed meal
- 2 t. baking powder
- 1 t. salt
- 1/2 t. baking soda
- 2 eggs
- 1 c. buttermilk
- 1/2 c. safflower or canola oil
directions
Preheat oven to 400 degrees. Mix dry ingredients in separate bowl. Mix liquid ingredients. Add dry ingredients, and stir until mixed. Put 1 T. additional oil into medium (10”-12”) iron skillet, and heat in oven for a few minutes. Pour batter into hot skillet and cook approximately 20 minutes or until top of cornbread is firm to the touch and slightly browned.
