Grandmother Odom's Cornbread
ingredients
- 1 c. cornmeal
- 1/2 c. flour
- 2 t. baking powder
- 1 t. sugar
- 1/2 t. salt
- 1 T. melted bacon grease (or vegetable oil)
- 1 egg
- about 1 c. milk

Preheat oven to 450 degrees. Mix all ingredients together, adding enough milk to make the batter “soupy.” Put an additional tablespoon of bacon grease or oil in a small (7”-8”) iron skillet. Heat skillet and oil in oven for 3 to 5 minutes. Sprinkle a handful (about 1/4 cup) of dry cornmeal into hot oil. (This is the Aunt Madolene part.) Add batter to hot skillet and bake for 12 to 15 minutes or until brown. Turn bread out immediately onto plate.

Variation for cornbread muffins: Add less milk, so that batter is more “dough-like.” Spoon into muffin tin, and bake 10-12 minutes, or until brown.
