Beth's Apple Fennel Slaw
My first exposure to a salad like this was on Top Chef. I searched and searched for a similar recipe and luckily found one in my Chef Series files from work. Dedicated to Beth, who loves this salad. Serve with orange balsamic pork tenderloin.
ingredients
- 1 head fennel
- 2 granny smith apples
- 6 stalks celery
- 1 small red onion
- 3 lemons
- 1/2 cup olive oil
- salt & pepper

Using a mandoline, slice fennel, apples, celery, and onion as thinly as possible.

Juice lemons into a large bowl. Add salt and pepper. Slowly whisk in oil.

Add vegetables and fruit. Let marinate at least 30 minutes at room temperature.
