Cat's Sweet Potatoes with Crispy Sage
Caramelized sweet potato slices with crispy sage!
ingredients
- 2 lbs sweet potatoes
- 1 cup olive oil (divided)
- 1 tbsp fine grain sea salt
- 2 cloves of garlic, chopped or pressed
- fresh sage leaves (20 or so)

The Potatoes
Preheat the oven to 425. Peel the sweet potatoes and slice them into half-inch rounds. Put them in a big bowl. Then put 1/2 cup of the olive oil in a blender along with the chopped garlic and the salt. Blend until cloudy, then pour all over the sweet potato slices and shake until they’re covered. Layer them in a 9 by 13 glass baking pan, maximizing their contact with the glass (that’s where the delicious caramelization will happen). Bake for 30-35 minutes or until potatoes begin to look crispy and golden at the edges.
Crispy Sage
While the potatoes are baking, heat the remaining olive oil in a medium-sized skillet until it shimmers. When it’s good and hot, throw in the sage leaves and let them fry, turning them over after about 30 seconds to get them good and crispy on both sides. When they’ve fried for about a minute or two, remove them from the oil with a slotted spoon and pat them dry on paper towels. Serve them crunched up and scattered over the sweet potato rounds.
