Fresh flavorful salad for any occasion.

ingredients

  • 1 large English cucumber diced
  • 2 small tomatoes diced
  • 1 yellow bell pepper diced
  • 1 green pepper diced
  • 3 radishes diced
  • 1 head Romaine lettuce chopped
  • small bunch parsley chopped
  • 2 lemons juiced
  • 1/3 cup olive oil
  • salt
  • pepper
  • dried crushed mint (optional)

    1. Combine all vegetables in large bowl.

    2. Add lemon juice, olive oil, salt, pepper and dried mint to vegetables. Combine until well incorporated.

    3. Keep chilled until ready to serve.

    4. Serve with food or eat alone.

notes

Can be made ahead of time by placing all vegetables in bowl and keep in refrigerator with out dressing. Add dressing just before serving.
