Grilled Haibut with Salsa
A very simple, light tasty fish dish. Could substitute other fishes as well. A good option to grill or broil to adjust to the season.
ingredients
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1/4 tsp Tabasco sauce
- 2 lbs fresh halibut fillets
- Tomato Salsa
- 1 1/2 cups tomato, diced
- 1 avocado, peeled, pitted and cubed
- 1/4 cup green onion, sliced
- 3 tbsp canned green chiles, diced
- 2 tbsp white wine vinegar
- 3 tbsp cilantro leaves, minced
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper

Marinating time 2-4 hrs. Preheat oven to broil or prepare grill

Combine olive oil, lime juice and Tabasco. Place fish fillets in a non-reactive pan large enough to hold them in one layer. Pour marinade over fish, cover and refrigerate for 2-4 hrs.

For Tomato Salsa: Combine all ingredients in a medium size bowl. Stir well. Cover and refrigerate 2-4 hrs. Bring to room temperature before serving.

Adjust oven rack 4-6 inches from heat. Place fish on grill or broiler pan and cook 10 minutes per inche of thickness, or until fish flakes easily with fork, turning once. Serve immediately with salsa.

We used already prepared salsa which made the dinner especially easy, yet fancy.
