5-minute southwest layered salad
Feast on a hearty layered salad that’s fit for company but simple enough for a weeknight.
ingredients
- 6 cups torn romaine lettuce
- 1 can kidney beans
- 1 can corn, drained
- 1/2 cup salsa
- 1/2 cup shredded cheese
- 1 red pepper cubed
- 1/4 cup ranch dressing
- 1 cup broken tortilla chips
- 3 chicken breast cooked and Cut into cubes. (we had it pre-cooked)
directions

place lettuce on serving platter or in a bowl

cover with layers of beans, corn,red pepper, and cheese
- 3
drizzle with dressing, sprinkle with chips
- 4
Serve with Salsa and Sour cream on the side...
