Blueberry Dessert

Another recipe from Great-Grandma Florence Lindbo. Megan’s favorite dessert.

ingredients

Crust
  • 1 1/3 cup graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1/4 cup melted butter
Filling
  • 2 eggs
  • 1/2 cup sugar
  • 8 oz. cream cheese
  • 1 tsp. vanilla
Topping
  • 1/2 cup blueberries, crushed
  • 1/2 cup sugar
  • 3 Tbsp. cornstarch
  • dash salt
  • 1 1/4 cup water
  • 1 1/2 cups whole blueberries
  • 2 Tbsp. lemon juice

directions

    Mix all crust ingredients together and press into 9x13 pan. Combine all filling ingredients until smooth; pour onto crust. Bake at 350° for 20 minutes. Let cool.

    For topping, mix crushed blueberries, sugar, cornstarch and salt in a saucepan. Add water. Cook and stir over medium heat until the mixture bubbles and thickens. Remove from heat, stir in whole berries and lemon juice. Spread on cooled crust, chill. Serve with whipped cream.
