Lemon Basil Scallops with Green Beans

This light seafood dish is simple enough for every day dinners and elegant enough for entertaining. Low calorie, FAST, and wonderful. Serve it over rice to soak up the extra sauce, and add a glass of white wine for a truly tasteful meal.

ingredients

  • 1 small red onion
  • 1 lb. fresh green beans, rinsed and trimmed
  • 1 lb. sea scallops
  • 1 cup chicken or vegetable broth
  • 2 tbsp. lemon juice
  • 4 tsp. cornstarch
  • 2 tbsp. lemon zest
  • 1 tsp. basil
  • 1/2 tsp black pepper
  • 2 tbsp. olive oil
  • 4 cloves of garlic, minced.

    Cut the onion into thin wedges and cut the green beans into two inch sections.

    In a small bowl, combine the broth, lemon juice, cornstarch, zest, and spices. Set aside.

    In a medium skillet, warm the oil over medium-high heat until hot, then add the onion and garlic and saute for 1 minute.

    Add the scallops and cook until they are almost completely opaque, about 4 minutes.

    Add the green beans.

    Stir the broth mixture to re blend, then add the contents to the skillet.

    Bring the liquid to a boil. Then, reduce heat to medium-low and cover. Let the pan simmer for about 4 more minutes or until the beans are crisp-tender and the scallops are cooked through.
