Orange Banana Cranberry Bread
The tartness of the cranberries in this bread balance out the sweet and sticky goodness of the other ingredients. With three fruits and a serving of nuts, this bread is hearty along with delicious.
ingredients
- 1 1/2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp. baking soda
- 1 cup brown sugar
- 2 mashed bananas
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 5-6 tbsp. orange juice
- 2 eggs, beaten
- 2/3 cup sesame oil
- 1/3 cup confectioners sugar
- gated rind of 1 orange

Preheat oven to 350 degrees and thoroughly grease a 2 lb. loaf pan.

Mix together flour, baking soda, and baking powder. Then add in sugar, bananas, chopped nuts, and cranberries.

In a separate bowl, mix the juice, eggs, and oil until well combined. Then add the wet mixture to the dry ingredients and stir until well blended.

Pour the mixture in the loaf pan.

Bake for about 1 hour, or until firm to the touch and the bread passes the toothpick test.

Turn bread out onto a wire rack to cool.

Mix the confectioners sugar with a little water, then drizzle over the cooled loaf.

Sprinkle orange zest over the top.

Let the frosting set, then slice and serve.
