Chicken "Chili" Tacos
ingredients
- 1/3 cup Olive Oil
- 5 chicken breasts cut into 3/4" dice
- 3 large onions, peeled and cut into 1/2" dice
- 3 bell peppers, stemmed, seeded and cut into 1/2" dice
- 3 ripe tomatoes, juiced, cored and cut into 1/2" dice
- 3 jalapenos, stemmed and cut into fine dice
- 4 tbsp chopped cilantro
- 3 large cloves garlic, peeled and chopped finely
- 1/2 tbsp chili powder
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 cup chicken stock
- 3 fully packed cups grated Jack cheese
- lime juice to taste
- salt to taste

Heat saute pan to medium-high heat. Add oil and saute chicken until lightly browned approximately 3 minutes. Add onions, peppers and cook for 2 minutes or until onions are transparent. Add tomato, garlic, jalapeno, cilantro, chili powder, cumin, coriander and chicken stock. Bring to boil. Reduce heat to simmer and cook for 20 minutes. Add cheese, stirring until thoroughly melted, season with lime juice and salt to taste.

To Serve: Put portion of chicken-cheese mixture on warm flour tortillas and roll up into cylindrical shape. Top with mango pico de gallo avocado relish, grilled onion, guacamole, sour cream, sliced jalapenos, sliced black olives. Allow each guest to create his own.
