Baked Spinach with Cheese
ingredients
- 2 (10-ounce) packages frozen chopped spinach, thawed and thoroughly squeezed dry
- 2 eggs, lightly beaten
- 1/3 cup grated Montery Jack or Muenster cheese
- 1 Tbsp. grated onion
- 1/2 tsp. salt
- 1/4 tsp. freshley ground pepper
- 1/4 tsp. nutmeg
- 1 1/2 Tbsp. unsalted butter, diced
- 2 Tbsp. freshly grated Parmesan cheese

Preheat oven to 325. Generously butter small casserole or au gratin dish. In a bowl, combine spinach, eggs, cheese, onion, salt, pepper, and nutmeg. Spoon into casserole.

Bake for 15 minutes. Dot with butter and Parmesan cheese and bake for an additional 15 minutes. Serve hot and bubbly.
