Chicken Pea Salad

ingredients

  • 1 small can green peas (drain)
  • 1 small can chickpea (drain)
  • 1 small can kidney bean (drain)
  • 200g boneless chicken (steam & diced)
  • 2 onion (diced)
  • 3 garlic (diced)
  • 1 red / green capsicum (diced)
  • 5 cherry tomatoes (half)
  • 1 sprig basil (chopped)
  • 1 sprig mint (chopped)
  • 1 sprig coriander (chopped)
  • 3 tbsp olive oil
  • salt to taste
  • 2 tbsp squeeze lemon juices
  • 2 tbsp paprika
  • 2 tbsp capers
  • 50g roasted sunflower seeds
  • 200g french dressing
  • Method:
  • 1) combine all thoroughly including the dressing excluding the sunflower seeds
  • 2) keep cool in the fridge about 1hr… when serving, sprinkle with the seeds
