Chicken Pea Salad
ingredients
- 1 small can green peas (drain)
- 1 small can chickpea (drain)
- 1 small can kidney bean (drain)
- 200g boneless chicken (steam & diced)
- 2 onion (diced)
- 3 garlic (diced)
- 1 red / green capsicum (diced)
- 5 cherry tomatoes (half)
- 1 sprig basil (chopped)
- 1 sprig mint (chopped)
- 1 sprig coriander (chopped)
- 3 tbsp olive oil
- salt to taste
- 2 tbsp squeeze lemon juices
- 2 tbsp paprika
- 2 tbsp capers
- 50g roasted sunflower seeds
- 200g french dressing
- Method:
- 1) combine all thoroughly including the dressing excluding the sunflower seeds
- 2) keep cool in the fridge about 1hr… when serving, sprinkle with the seeds
