Fluffy Homemade Buttermilk Pancakes
Thick, fluffy homemade pancakes! Stir in chocolate chips for a delicious treat!
ingredients
- 2 cups all purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 3-4 tablespoons butter, melted and cooled
- 1 large egg
- 1/2 teaspoons vanilla extract (opt)

Whisk the flour, sugar, baking powder, baking soda and salt together in a large bowl. In a medium bowl, whisk the buttermilk, melted & cooled butter, and egg together. Make a well in the center of the flour mixture, pour the buttermilk mixture into the well, and gently whisk together until mixed with a few lumps remaining (Don’t overbeat.)

Fold in chocolate chips (opt.) or blueberries and let batter sit while you heat a non-stick griddle or pan over medium heat.

Pour ladle full of batter onto the griddle. (use more or less depending on the size pancake you want).

Cook on the first side until bubbles form (or gently lift up the pancake to make sure the bottom is not overcooking).

Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone.

Let cooked pancakes rest on a heat proof plate in a 200 degree F oven until ready to serve.
notes
Tips: - Cool butter thoroughly - Use only fresh baking soda and powder (check the expiration dates!) - Keep heat to medium or 325 on electric skillet. Too high a heat makes overly browned pancakes uncooked inside
