French Twist Potato Salad
ingredients
- 3 lbs small red potatoes, boiled, peeled, cubed into 1" pieces
- 4 eggs, hard boiled, peeled, sliced very thin
- 2 cups celery, very thinly sliced
- 1/2 cup finely chopped vidalia
- onion
- 1/2 c dill pickle, chopped
- 1 cup mayonnaise
- 1/4 cup buttermilk
- 1/4 cup dijon mustard
- 1/4 c champagne vinegar
- 3 T fresh tarragon, snipped
- 1 tsp celery seed
- 1 tsp ground mustard
- 1 tsp paprika
- salt and freshly ground pepper to taste

Prepare potatoes and eggs, place in a large bowl, add selery, onion, and dill pickle

Prepare Dressing: in a separate bowl whisk mayonnaise with buttermilk, dijon, champagne vinegar, 2 T fresh snipped tarragon, celery seed, ground mustard, paprika, salt and pepper.

Mix dressing into potatoes mixture.

Sprinkle with remaining tarragon,

cover and chill for a half hour or more.
