Spicy pork loin with corn & bean salsa
ingredients
- 2 cups fresh or frozen corn kernels
- 1 tomato, chopped
- 1 15oz can black beans, drained
- 1/4 cup chopped red onion
- 1/4 cup chopped red bell pepper
- 1 4oz can chopped green chiles
- 3 tablespoons finely chopped fresh cilantro
- 4 tablespoons lime juice
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- PORK LOIN:
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 tablespoon dried oregano
- 3 to 4 pound boneless pork loin

- Prepare Corn & Bean salsa: combine all ingredients and refrigerate overnight.

- Preheat oven to 350°F.

- combine cayenne pepper,salt, oregano and black pepper; rubb mixture over the prok loin.

- place pork in a shallow pan and roast for about 1 1/2 hours, until internal temperature is 160°F. Let loin rest for 10 minutes before slicing.

- serve with corn & bean salsa
