Bastard Caesar Salad
Caesar Salad is one of my all time favourite dishes. This isn’t a traditional Caesar, it’s the bastard cousin of a Caesar, hence the name. Goes well with crusty bread and a glass of crisp white.
ingredients
- 2 handfuls of crisp baby cos leaves
- 200g cubed spec or prosciutto
- 3 eggs
- 6 anchovies
- 200g danish feta (or any soft feta)
- extra virgin olive oil
- white wine vinegar
- 1 tbs dijon mustard
- salt & pepper
directions

Whisk the olive oil, white wine vinegar & Dijon until creamy. Season to taste.

Fry the spec until brown and crispy. Drain on paper.

Poach the eggs, yolks should still be soft. Drain.

Arrange the cos on the plate. Top with spec, crumbled feta, anchovies, the 3 soft poached eggs and drizzle the dressing over the top.

When the eggs break, the yolks will also add to the dressing. Caauuwww...
