BBQed Chicken with Lemon Chipotle Baste

ingredients

Lemon Chipotle Baste
  • 1/4 cup extra virgin olive oil or melted butter
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 tbsp pureed chipotles
  • 2 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 1 tbsp fresh thyme or 1 tsp dried
  • 1 tsp kosher salt
Chicken
  • 2 3-lb chickens, cut in quarters (or just breasts or thighs, bone in, skin on)
  • 1/4 cup extra virgin olive oil
  • 1 tbsp paprika
  • 1 tbsp kosher salt
  • 1/4 tsp pepper

    To prepare baste, in a bowl, combine oil, lemon juice, garlic, chipotles, Worcestershire, honey, thyme and salt.

    2. Rub chicken with oil, paprika,salt and pepper. Grill for about 5 minutes per side or until browned.

    3. Transfer chicken, skin side up to cooler part of grill and cook with barbecue lid down for 20 to 30 minutes or until internal temperature reaches 165F. Base with lemon mixture every 10 minutes. Or transfer browned chicken to a baking sheet and finish cooking in a preheat 400F oven for 30 minutes. Stop basting for last 5 minutes of cooking to make sure any uncooked chicken juices in basting sauce don’t end up on the chicken.
