Over The Rainbow Macaroni and Cheese
Delicious and Perfect for a Family Gathering!

- 1 lb elbow macaroni
- 9 tbsp butter
- 1/2 cup muenster cheese, shredded
- 1/2 cup mild cheddar cheese, shredded
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup monterey jack cheese, shredded
- 8 oz Velveeta cheese, cubed
- 2 cups halk & half
- 2 eggs, slightly beaten
- 1/4 tsp salt
- 1/4 tsp pepper

Preheat oven to 350° F

Lightly butter a deep 2 1/2 quart casserole dish. Cook elbow noodles, drain and return macaroni to the pot.

In a small saucepan, melt 8 tbsp butter and stir into the macaroni. In a large bowl, mix the muenster, cheddar (mild and sharp), and monterey jack cheeses.

Add half & half, egg, 1 1/2 cups of the cheese mixture, the cubed Velveeta, salt, and pepper. Pour the mixture into the casserole dish and top with remaining 1/2 cup cheese and 1 tbsp of butter.

Bake 35 minutes until bubbly around the edges.
