Allan's Caesar Salad
The original Caesar Salad from Mexico, adapted for speed and ease!
ingredients
- romaine lettuce
- one egg
- olive oil
- garlic
- lemon juice, pepper, worcestershire sauce
- anchovy paste or anchovies
- croutons
- 1/2 cup parmigiano reggiano grated or shaved
- plus more on top when serving

Chop or tear washed romaine, or use whole tiny leaves. Dry well and chill in the fridge!!!

For the dressing, combine in a tall cup or bowl:

1/4 cup olive oil, one clove minced or crushed garlic (if less sharp garlic flavor is desired, heat chopped garlic plus a few drops of water in microwave for 15 sec max)

To olive oil and garlic mixture, add an egg, raw or coddled in a cup of boiling water for 1 minute.

juice from half a lemon, pepper, five drops worcestershire sauce, half an inch of anchovy paste or half an anchovy

Mix the ingredients well with a whisk or immersion blender until creamy.

Just before serving, toss with romaine and croutons. Then mix in parmesan cheese and serve with anchovies if desired. Sprinkle more cheese on top. Salt if needed.
