Cucumbers in Sour Cream
Nice side dish in the summer. Cucumbers, a member of the gourd family, are low in calories: 1 cup of sliced cucumbers has just 14 calories.
ingredients
- 1 cucumber(washed,sliced thin, but not peeled)
- 1 t salt
- 3/4 c reduced-fat sour cream
- 2T vinegar
- 1 t sugar
- 1/2 t dried dill weed
- dash pepper
directions

Thinly slice cucumber;sprinkle with salt. Let stand 30 minutes(you can put a heavy plate or bowl on top to help push out the water),drain.

Combine the other ingredients and pour over cucumbers. Chill about 30 minutes.

Although cukes are generally low in nutrients, their skins are a good source of lutein, a plant chemical that may keep our eyes healthy. But if you prefer, peel them first.
