Rice Jardin

This is one of our favorite rice dishes from my good friend Julie. When we visit with her and Michael I usually request this dish.

ingredients

  • 3/4 cup chopped onions
  • 1 1/2 pounds zucchini, thinly sliced
  • 3 tablespoons butter or margarine
  • 1 can {14 or 15 oz} whole kernel corn, drained
  • 1 can {14 or 15 oz.} tomatoes {I often use stewed tomatoes}
  • 3 cups cooked rice
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp ground coriander
  • 1/4 tsp oregano

directions

Sauté onions & zucchini in butter until tender. Add remaining ingredients. Cover & simmer 15 minutes. I find that exact amounts are not necessary in this recipe.
