These Chiliquillas make me want to dance! Cha, Cha, Cha!!!

ingredients

  • 6 large eggs
  • 1/4 cup of milk
  • Pinch of salt
  • 1 can of Rotel tomatoes and green chile’s
  • 1/2 pound of hot pork sausage or chorizo
  • 1/4 cup chopped onion
  • 1/2 cup of shredded cheddar cheese
  • 1/2 cup of cubed Velveeta
  • Tortilla chips

directions

Brown sausage or chorizo and chopped onion in skillet. Drain and set aside. Beat eggs, milk, and salt in medium bowl. Spray skillet with non-stick coating and add egg mixture. Scramble eggs until lightly set. Add meat mixture, Rotel, and Velveeta. Continue cooking until the Velveeta is melted. Remove from heat. Serve on tortilla chips topped with cheddar cheese.
