BLACK EYED PEA SALAD
mAKES A GREAT SHOW AND GATHERING RECIPE
ingredients
- 1 small bag frozen black eyed peas or soak dried peas
- 1 box frozen corn or if in season cut fresh corn off cobb
- 1/2 red bell pepper diced
- 1 anaheim pepper diced
- 1 jalopeno pepper diced
- 3 spring onions chopped
- 12 baby carrots diced
- 2 stalks cebery diced
- 4-5 broccoli florets chopped
- handful snow peas or sugar snaps
- handful chopped fresh Italian parsley
- Crumbed feta cheese to taste
- Dressing
- approx 3 oz. maries Italian Vinaigrette or your favorite homemade
- 2 T apple cider viegar (use unfiltered organic)
- Mrs. Dash tomatoo, Basil, Garlic..a few shakes
- 1 teaspon mustard seeds
- black pepper and kosher salt to taste
- franks red hot hot sauce..a few dashes

Dressing: Mis dressing ingredients and set aside

Rinse peass and thaw. Place in microwaveable container. fill with water to cover and microwave on high for 15-20 minutes or until just tender. Not soft. rinse again and cool

rinse and thaw corn. No need to cook b/c will marinate

blanch broccoli and cool

cut peppers, onions, crrots, celery in small dice, even pieces. cut snow peas into small pieces. cut broccoli florets into small pieces slightly larger than the rest of the veggies. Mix all together well

Begin the day before you plan to serve. Slowly add the dressing a 1/3 at a time, stir well and refrigerate in between. Stir well each time and add the final thrid the day you serve. toss in cheese..Stir...
