Mary Kay's Christmas Brunch Casserole

A favorite at Decker family holiday brunches. Mary Kay was a great cook.

ingredients

  • 1/4 c. chopped onion
  • 2 T. butter
  • 2 T. flour
  • l-1/2 c. milk
  • 4 oz. Old English cheese, shredded
  • 6 hard boiled eggs, coarsely chopped
  • 1 1/2 c. crushed potato chips
  • 10-12 slices bacon, fried and crumbled

directions

Fry the bacon until it is really crisp. Let it cool and then crumble it into little pieces. Cook the onion in a small saucepan in the butter. Blend in the flour and add the milk. Stir until thick and boiling. Add cheese and stir until melted. Layer in a buttered 13” x 9” pan one-half of the egg, one-half of the cheese mixture, one-half of the potato chips, and one-half of the bacon. Repeat. Bake at 350° for 20 minutes.
