Greek Orzo Salad

1 cup orzo, cooked
2 T. olive oil
1/4 cup lemon juice
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp pepper
1/2 cup kalamata olives, chopped
1 cup feta cheese, crumbled
1/4 cup fresh dill leaves, chopped
2 T. fresh mint, chopped
2 cups tomatoes, chopped
3/4 cup carrot, shredded
In a large mixing bowl, combine pasta, olive oil, olives, feta, dill, mint, tomatoes and carrots. Whisk together lemon juice, garlic, salt and pepper. Drizzle over pasta mixture. Toss and serve.
