Greek Orzo Salad

  • 1 cup orzo, cooked

  • 2 T. olive oil

  • 1/4 cup lemon juice

  • 2 cloves garlic, minced

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/2 cup kalamata olives, chopped

  • 1 cup feta cheese, crumbled

  • 1/4 cup fresh dill leaves, chopped

  • 2 T. fresh mint, chopped

  • 2 cups tomatoes, chopped

  • 3/4 cup carrot, shredded

  • In a large mixing bowl, combine pasta, olive oil, olives, feta, dill, mint, tomatoes and carrots. Whisk together lemon juice, garlic, salt and pepper. Drizzle over pasta mixture. Toss and serve.
