Olive Crostini
ingredients
- 1/2 cup black olives
- 1/2 cup green olives with pimento
- 2 medium cloves garlic
- 1/2 cup grated parmesan cheese
- 4 Tablespoons butter
- 2 Tablespoons olive oil
- 1/2 cup grated Monterey Jack cheese
- 1/4 cup chopped fresh parsley
- 1 baguette

Chop olives coarsely in food processor. Transfer to another bowl.

With blade running, mince garlic. Add parmesan, butter and olive oil to make a thick paste.

Add paste to bowl of olives.

Stir in Monterey Jack cheese and parsley and mix well.

Slice baguette thinly and spread pieces with olive/cheese mixture.

Cook under broiler until bubbly and lightly browned - about 4 to 5 minutes. Watch closely to avoid burning bread.

Leftover mixture keeps well for weeks in refrigerator or longer in freezer.
