Fresh and Chunky Chicken Salad
ingredients
- Chicken:
- 1 T lime juice
- 2 t olive oil
- 1/2 t salt
- 1/2 t garlic powder
- 1/2 t onion powder
- 1/4 t pepper
- 3 boneless, skinless chicken breast halves
- Salad:
- 1/2 cup diced apple
- 2 T orange juice
- 1/4 cup fat free greek yogurt
- 1/4 cup fat free mayonnaise
- 1/8 t pepper
- 1 cup diced cantaloupe
- 1 medium peach, peeled and diced
- 1 celery rib, diced
- 1/4 cup sliced grapes
- 1/4 cup chopped, toasted walnuts
- 1 green onion, chopped
- 4 butter lettuce leaves

Combine all the chicken ingredients in a large, re-sealable plastic bag. Seal bag and turn to coat. Refrigerate for 20 minutes.

In a small bowl, toss apple with orange juice and set aside. IN a large bowl, whisk the yogurt, mayonnaise, and pepper until blended. Stir in cantaloupe, peach, celery, grapes, walnuts, onion, and apple mixture. Cover and refrigerate.

Put chicken in a large saute pan and cover with a lid. Steam until thoroughly cooked, 30 - 45 minutes. Remove and cut into small chunks. Stir into the yogurt and fruit mixture. Serve immediately over lettuce leaves.
