Overnight Breakfast Bake
Perfect to prepare the night before.
ingredients
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 pound fresh mushrooms sliced
- 6 green onions sliced
- 1 medium red pepper, chopped
- 2 tablespoons butter
- 2 cups (1 pound) ham (cubed) or sausage browned & drained.
- 1/4 cup flour
- 1 3/4 cups milk
- 8 eggs
- salt & pepper

1. In a large skillet, saute mushrooms, onions & red pepper in butter, stir in ham or sausage.

2. Spoon into greased 13x9x2 baking dish.

3. Sprinkle with cheeses.

4. In a bowl, combine flour eggs, milk, salt & pepper. Pour over mixture. Cover & refrigerate overnight.

5. Remove from the refrigerator 30 minutes before baking.

6. Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted near the center comes out clean.

7. Let stand 5-10 minutes before serving.
