Zucchini Pancakes
These were meant to be like hashbrowns, but turned out so lovely and fluffy that they are instead delicious flavorful pancakes.
ingredients
- 2 cups zucchini, grated
- 1 cup onion, grated
- 1/2 cup soy flour (or flour of choice)
- 4 eggs
- 2 tsp. onion powder
- 2 tsp. garlic salt
- 1 tsp. salt
directions

Combine all ingredients in a bowl, stirring until well combined.

Drop hash mixture into a heated skillet and let brown.

Then flip and cook the other side.
