Apple Cheddar Muffins
These moist delicious muffins are the perfect start to any day. They are great right out of the oven, but also freeze well and are amazing toasted.
ingredients
- 2 small Apples
- 1/2 cup Applesauce, unsweetened
- 3 tsp. baking powder
- 1 1/2 tsp. baking soda
- 3/4 cup cheddar cheese, 2%
- 3 eggs
- 1 1/2 cups flour, all purpose
- 1 1/2 cup milk, nonfat
- 4 tbsp. oil, canola
- 1 cup protein powder
- 2 tsp. Splenda
- 1/2 cup water
directions
Stir the dry ingredients together in a large bowl. Add the milk, water and applesause and stir until all the dry ingredients are moist. DO NOT OVER MIX. Peel, core and dice the apples. Add the apples, cheddar cheese, oil, vanilla and eggs and stir to incorporate. Let the batter rest while you heat the oven to 400 degrees. When the oven is hot, drop the batter into muffin tin cups misted with cooking spray, (cups will be full). Bake for 10 to 15 minutes, reduce temperature to 375 and bake an additional 10 minutes,or until the tops have browned and a toothpick inserted into the center of the muffins comes out clean.
