Zucchini Corn Salad w/ Vinaigrette
ingredients
- 1 small zucchini, thinly sliced (raw with skin on)
- 1 cup fresh corn, chopped off the cob (or thawed frozen corn)
- 1 pint grape or cherry tomatoes, halved
- 1/4 cup finely chopped red onion
- 1 can garbanzo beans, drained and rinsed
- 1/2 cup feta cheese
- Mixed Greens
- Red Wine Vinaigrette:
- 1/4 red wine vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste

For the dressing: Mix everything together except the oil. Drizzle in oil slowly while whisking.

Toss the mixed greens with half the vinaigrette, then top the greens with the rest of the ingredients and pour the remaining dressing over the whole salad.
