Mom's Chicken and Dumplings
ingredients
- 2 c flour
- 2 eggs, beaten in measuring cup
- chicken broth
- 1 tsp baking powder
- 1 tsp salt
- lg roasting chicken
- 1 lg onion, chop coarsely
- herbs of choice
- 2 bay leaves
- carrots and celery , finely chop (optional)

Boil whole chicken in broth with onion, herbs, house seasoning, and carrots and celery, if you are adding those to make your broth more nutritious, for 1 hour 30 min. Cool and debone. Mix flour, salt and baking powder in lg bowl. Add broth to eggs to make one cup. Add to flour. Mix and form into ball, then roll out on floured board. Cut into 1x2" pieces. Drop one at a time into boiling broth. Don’t stir.

cover and simmer 30 min. Add chicken back into pot.
