German Potato Salad

ingredients

  • 20 lbs. potatoes
  • 20 slices of bacon
  • 2 lg. onions, diced
  • 5 T. flour
  • 1 1/4 cups sugar
  • 5 tsp. salt
  • 5/8 tsp. pepper
  • 1 1/2 tsp. celery seed
  • 5 tsp. regular mustard
  • 1 1/2 cups vinegar
  • 1 1/2 cups water

directions

Cook, peel and dice potatoes. Fry bacon and crumble. Reserve 10 T. bacon grease. Mix flour, sugar, salt, pepper, and celery seed together and add to hot grease, stirring until well mixed. Then add mustard. Mix together vinegar and water. Pour slowly into skillet stirring constantly and bring to boil until desired thickness. Pour over potatoes. Serve warm.
