Tuna and Shell Pasta Salad
ingredients
- Ingredients:
- 8 ounces medium shell pasta
- 7 ounce pouch chunk light tuna
- 2 celery stalks, chopped
- 3/4 cup yellow pepper, chopped
- 1/2 cup red onion, chopped
- 1 6 ounce can or jar artichoke hearts, drained, rinsed, chopped
- 1/2 dry pint cherry tomatoes, halved
- Dressing:
- 1/4 cup fat-free, reduced sodium chicken broth
- 1 tbsp lemon juice
- 1 tsp extra-virgin olive oil
- 1 tsp dijon mustard
- black pepper
- 1/4 tsp dried oregano
directions
Cook Pasta according to instructions on package. Drain and cool. Combine tune, celery, onion, pepper, artichoke hearts and tomatoes in a large bowl with cooled pasta. Whisk dressing ingredients together and drizzle over tuna and pasta. Toss well, and chill until ready to serve.
