Kolacky, with a variety of fillings
Grama Sylvia and Grama Evelyn always had a fresh batch, variations were apricot, cottage cheese, or prune filled.

- 7 C flour
- 1 package active dry yeast
- 1 C lukewarm water
- 1/2 teaspoon ground mace or ground nutmeg
- 1 cup milk
- 1/2 cup butter
- 1 C cup granulated sugar
- 1 T salt
- 3 eggs
- 1 teaspoon vanilla
- 1 teaspoon lemon zest
- To brush pastries:
- 1 egg
- 1 Tbsp milk
- Poppyseed filling:
- 2 C ground poppy seed
- 1/2 cup milk
- 1/2 cup honey
- 1/2 t cinnamon
- 1 T butter
- Combine all ingredients and cook until thick, about 5 minutes)
- Cottage Cheese Filling:
- 1 qt cottage cheese, drained
- 1 tsp cinnamon
- 1 c shredded coconut
- 1/2 c sugar
- 3/4 c raisins
- 2 egg yolks
- Apricot or Prune:
- 1 lb dried apricots or prunes
- 1/2 c sugar
- 1/2 c nuts
- 1/2 c chopped walnuts
- 1 tsp vanilla
- rind of 1 orange

Preheat oven to 400 degrees.

Mix together water, yeast, and 1 T sugar, set aside.

Scald 1 cup milk, add 1 cup sugar, butter and salt.

Let cool.

Add yeast mixture, 2 C flour, and 3 eggs, mix together, add remaining flour. Raise for 1 1/2 hours.

Punch down dough, roll out onto a floured board, cut into 3" squares, fill each with 1 heaping tsp of fruit filling, fold corners of dough together.

Place in greased pan and allow to rise 1 hour.

Brush with 1 egg mixed with 1 T milk.

Bake at 400 degrees for 1 hour.
