Spicy Green Papaya Salad
Fresh Light Summery Salad with Shrimp
ingredients
- 20 medium shrimp brush with olive oil + paparika
- One 1/2 pound papaya. Green or less ripe is best!
- 2 small thai chilies
- 1 large garlic clove
- 1/4 cup brown sugar
- 1/4lbs thin green beens pound and half crosswise
- 3 tbls fresh lime juice
- 2 tbls fish sauce (pinch of salt will do)
- 2 dozen cherry tomatoes halved
- 1/3 cup coarsley chopped roasted salted peanuts

Halve the papaya, scrape out the seeds and peel the skin. Julienne the flesh. Set aside.

Chop chiles and garlic. Pound green beans and add. Pour in lime juice, fish sauce, and sugar, stir to dissolve. Add tomatoes and lightly pound them.

Skewer and grill shrimp. When shrimp are ready toss the above mixture with peanuts and papaya. Serve.
