Lobster Newburg Sauce
ingredients
- 9 ounces Cozy Cove frozen lobster meat or fresh
- 1/2 cup butter plus 6 tablespoons
- 1/4 cup sherry
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1/2 cup heavy cream
- 6 tablespoons flour
- 1 1/2 cup milk

Saute lobster in butter for 2 to 3 minutes.

Add extra butter.

Stir in 6 tablespoons flour over low heat, slowly adding milk. Stirring constantly until thickened.

Lastly add cream, sherry and paprika. May add beaten egg yolks for added thickness.
